Hot Chocolate with Foam

Eight parts milk to one part chopped chocolate, melted rather than stirred in as powder, with a separate foam on top.

  • 16 ozwhole milkSwap: Oat milk, which carries chocolate better than most alternatives

  • 1 tbspsugar, adjusted to the chocolate you used
  • 1pinch of salt
  • 2 ozextra milk, held back cold for the foam

Method

  1. Make a paste with the cocoa before the milk goes in

    Cocoa powder, sugar and salt with about two tablespoons of the milk, worked into a smooth paste in the cold pan. Cocoa tipped into hot milk forms lumps that survive any amount of whisking.

  2. Bring the milk up slowly, and stop below a simmer

    About 5 minutes over medium-low heat

    Milk held at a boil forms a skin and catches on the bottom of the pan, and both of those change the flavor. You want it steaming with small bubbles at the edge, no more.

  3. Take it off the heat before adding the chocolate

    1–2 minutes of whisking

    Chopped chocolate melts perfectly well in milk that is already hot, and it seizes if it is heated too fast. Off the heat, whisk until there is no grain left when you draw the whisk out.

  4. Froth the reserved cold milk separately

    15 seconds

    The foam has to be made from cold milk, because milk that is already hot will not hold air. Two ounces frothed for fifteen seconds gives a cap for both cups.

  5. Pour, then spoon the foam on

    Chocolate into the mugs first and the foam on top with a spoon. Poured, the foam sinks straight through and you are left with a slightly bubbly hot chocolate.

The one thing that ruins it

Adding the chocolate while the pan is still on the heat. It scorches against the base of the pan before it disperses, and the burnt note that produces runs through the entire batch.

Technique behind this drink

Make it ahead, or batch it

The chocolate base can be made and refrigerated for a day, then reheated gently — it thickens as it cools and needs a splash of milk on the way back up. The foam has to be made fresh. Keep the base within the dairy holding times in the cold-storage chart linked from the coffee station page.

The base scales well and the foam does not, which makes this an easy drink to serve to six people if you split the two jobs. What actually breaks is heat distribution: a large pan of milk has a much bigger hot spot at the bottom, so the risk of catching goes up sharply with volume — stir more often rather than turning the heat up, and add about half again as much time. Chocolate should be added off the heat regardless of batch size, and it needs to be chopped finer for a large batch, since a big pan of milk drops in temperature more slowly but the chocolate at the bottom is exposed to more residual heat. For the foam, work in pairs of mugs and expect to froth three times for six people.
