What this actually decides

A handheld frother does two jobs that pull in opposite directions. Foam wants air driven into cold dairy fast, before the fat warms up and stops holding structure. Matcha and cocoa want the opposite — a powder broken up and dispersed without whipping air into it, because a matcha latte with a head of foam on it is a matcha latte you have half wasted.

That is why speed and control are the two specifications worth looking at, and why almost no listing gives you the first one. A frother that states its motor speed is telling you something real about how quickly it can finish the foam job. One with multiple speeds is telling you it can also do the dispersing job properly. Everything else — the stand, the charging method, the number of whisk heads — decides whether the thing stays on your counter instead of migrating into a drawer.

Lifespan and care

The motor is rarely what fails. What ends most handheld frothers is the shaft seal admitting milk after months of being rinsed under a running tap head-down, or a rechargeable cell that stops holding charge. A detachable head washed properly and dried before storage is the single biggest factor in how long one lasts.

  • Rinse the whisk under hot water the second you finish, before the milk dries onto it. Wet milk takes three seconds; dried milk needs a soak.
  • Never submerge the body. Only the shaft and whisk should go near water, whatever the listing implies.
  • Dry it before it goes back on the stand, so water does not sit against the seal at the base of the shaft.
  • Take the batteries out if it will be unused for a long stretch.
  • If foam stops forming properly, check the whisk for a bent coil before assuming the motor is tired — a distorted loop cannot pull a vortex.

Yes, but a multi-speed one does it noticeably better. Foam wants full speed and a shallow head position; matcha wants a lower speed with the head deeper, so you disperse the powder without building a head of foam on top of it. With a single-speed wand you can approximate the matcha job by keeping the whisk at the bottom of the cup.

Almost always temperature. Fat has to be cold to hold air, so dairy that has been standing out for ten minutes will foam convincingly and then fall back to liquid. Chill the cup as well as the liquid. The other cause is over-frothing: past the point where the surface holds a soft ridge, the fat clumps and squeezes the air back out.

More than the frother does, in a lot of cases. The whisk needs to be surrounded by liquid to pull a vortex, so a tall narrow cup works and a wide mug just spins the milk in a circle around the head. If foam is not forming, change the cup before you change the tool.

Batteries if the frother lives on a busy station and being out of action for two hours is unacceptable — a flat unit is fixed in seconds. Rechargeable if you would rather not keep batteries in stock and the thing sits in a stand between uses anyway. Neither is better; they fail differently.

Barista-labeled oat milk foams well, because those formulations carry the fat and protein content the foam needs. Standard oat milk foams thinly and drains back quickly. This is a property of the milk rather than of the frother, so no amount of extra whisking will fix the wrong carton.
