Method

  1. Use a cup narrower than you think

    Six tablespoons of liquid in a wide bowl spreads too thin for the whisk to catch. A tall narrow cup keeps the volume deep enough that the head stays submerged the whole time.

  2. Dissolve before you whip

    Stir the coffee and sugar into the hot water until there is no grit left at the bottom. Undissolved sugar crystals will still be there at the end, and they cut the foam as it forms.

  3. Whip it far longer than feels reasonable

    90 seconds to 2 minutes with a handheld frother

    It goes through an unpromising stage where it is simply brown and frothy. Keep going: the color lightens to a pale caramel and the texture changes from liquid to something closer to whipped cream.

  4. Test with the whisk, not by eye

    Pull the whisk straight up. If the peak it leaves stands rather than folding over, stop. Beyond that point the structure starts breaking down again and it will not recover.

  5. Build the glass cold, then spoon the foam on

    Ice, then milk, then the foam on top with a spoon rather than poured. It sits as a distinct layer and stays there for several minutes before anyone needs to stir it in.

The one thing that ruins it

Using ground or brewed coffee instead of instant. Only freeze-dried instant carries enough dissolved solids to hold air; anything else foams briefly and then falls apart into brown water.

Technique behind this drink

Make it ahead, or batch it

The whipped mixture holds in a covered container in the refrigerator for a few hours and can be re-whipped for about ten seconds to bring it back. Beyond that it separates into a syrup layer and a foam layer that will not recombine.

Aeration sets a hard ceiling on this one. The whisk can only work the volume it can reach, so tripling the mixture in the same cup gives you a whipped top and an unwhipped bottom that folds the air straight back out when you stir it. Scale by making batches of two servings each in the same narrow cup rather than one large batch in a bowl, and expect the total time to scale linearly — there is no shortcut in doing more at once. The sugar is structural here, not just sweetening, so cutting it back to taste will cost you the foam.
