A drink station produces water constantly and from several directions at once: condensation off glasses, drips from an ice scoop, splashes from a rinsed frother, the puddle under a machine. Without somewhere designated for that, it goes onto the counter, and a counter that has to be wiped six times an afternoon is a counter people stop using.

The choice is between absorbing the water and containing it, and the two behave completely differently. Microfiber takes volume in and holds it, which is right for a drying field and wrong beside a tap, because it never gets a chance to dry out. Silicone and stone do not absorb at all — silicone pools it on the surface where you wipe it away, stone pulls it in and releases it back to the air. Most stations want one of each in different places rather than two of the same.

Silicone and stone

For the sink side, a cart, or anywhere the water arrives as an endless series of small drips. Neither material becomes a wet cloth: silicone pools water on the surface to be wiped away, stone absorbs it and gives it back to the air. These are also the only mats here that take heat.

Lifespan and care

Microfiber is finished when it stops absorbing, which happens gradually and invisibly — the mat looks the same as the day it arrived. Run it on a laundry schedule rather than waiting to notice. Silicone and stone effectively do not wear out; stone stains and silicone eventually tears at a folded corner.

Questions people actually ask

They solve different problems. Microfiber absorbs volume, so it belongs where wet glassware lands. Silicone contains drips without ever becoming damp itself, so it belongs beside a tap or under a machine. A station that does both jobs well usually has one of each rather than two of the same.

Weekly for microfiber in regular use. The difficulty is that a saturated mat looks identical to a fresh one, so this has to run on a schedule rather than on noticing. Keeping a second mat is what makes the schedule survive contact with reality.

Usually fabric softener. It coats microfiber and leaves it water-repellent, which is the opposite of the job. Wash these without softener and without dryer sheets. If it has already happened, a hot wash with a little white vinegar and no detergent will often strip the coating back off.

Only on a mat with a stated heat rating, and only up to that figure. Several listings say heat resistant without giving a number, which is not a specification you can rely on. Microfiber is not heat resistant at all — it is a drying mat, not a trivet.

Diatomaceous stone absorbs water and then releases it to the air, so it does dry between uses without laundering. The trade is that stone is a hard surface, so glass set down on it is noticeably louder, and it takes stains from coffee and fruit that never fully come out.
